Selectively harvested then cold soaked for up to 3 days prior to 100% whole berry fermentation in open pot vessels. Gently hand plunged during ferment for controlled flavour and tannin extraction.
Predominantly ferments were inoculated with a Burgundian selection of yeast strain, with some batches allowed to ferment naturally. 9 months barrel maturation in 15% new French oak (80% puncheon and 15% barriques) prior to bottling.
An intensely fruited and perfumed aromatic profile combines dark cherry, plum, raspberry, wild strawberry and currant notes. A structurally generous and gratifying palate offers both clarity of fruit expression and drive.
