This Pinot is from our glorious Dixons Creek vineyard. Aromas of sweet berries, cinnamon spices and subtle vanilla bean, mixing with hints of earth, cedar and cigar coming through the oak. Ethereal perfumes and a violet-based blue lift. Silky fine tannins and a bright clean acidity gives the wine line and persistence into the back palate.
Hand-harvested and de-stemmed, the Pinot fruit was cold soaked for four days prior to inoculation with Burgundian yeast. Transferred to French oak (50% new) for 12 months maturation before bottling.
